Recipe: A Healthy Fermented Lemon Drink Called SIMA

Ingredients for SIMA 4 lemons 3/4 cup white sugar 3/4 cups brown sugar 11 cups water 1/8 tsp. yeast 10 dried raisins ==================== Preparation for SIMA Bring 3 cups of water to a boil. Wash lemons and remove zest with a peeler or zester. Slice the lemons (no seed). Remove the boiling water from the stove. Add the sugars to the boiled water. Stir to dissolve the sugars. Let the syrup with lemons cool. Put the syrup with lemons into one or more glass jars when it is warm, not hot. Pour 2 cups of cold water over the syrup with lemons. Take some warm water and dissolve the yeast in it. Let the yeast in water sit for 5 minutes. Add the rest of the water to your mixture and add the yeast solution to that also. Let the SIMA/Lemon drink ferment for 24 hours. After 24 hours filter the liquid to keep out the lemons. Add the raisins (you can choose more if you want).
