Recipe: A Healthy Fermented Lemon Drink Called SIMA
Ingredients for SIMA
4 lemons
3/4 cup white sugar
3/4 cups brown sugar
11 cups water
1/8 tsp. yeast
10 dried raisins
11 cups water
1/8 tsp. yeast
10 dried raisins

Preparation for SIMA
- Bring 3 cups of water to a boil.
- Wash lemons and remove zest with a peeler or zester.
- Slice the lemons (no seed).
- Remove the boiling water from the stove.
- Add the sugars to the boiled water.
- Stir to dissolve the sugars.
- Let the syrup with lemons cool.
- Put the syrup with lemons into one or more glass jars when it is warm, not hot.
- Pour 2 cups of cold water over the syrup with lemons.
- Take some warm water and dissolve the yeast in it.
- Let the yeast in water sit for 5 minutes.
- Add the rest of the water to your mixture and add the yeast solution to that also.
- Let the SIMA/Lemon drink ferment for 24 hours.
- After 24 hours filter the liquid to keep out the lemons.
- Add the raisins (you can choose more if you want).
- Ferment the SIMA for 12 hours and you will see the raisins rising to the top.
- You can ferment it longer if you want more fizz.
- Refrigerate your SIMA drink and it is best consumed within 7 days.
